The Biscardo Enigma Appassimento Sangiovese Rubicone is the result of a meticulous and traditional process. The harvest takes place at the end of autumn when the grapes are partially dried and handpicked. These raisins, still hanging on the vines, are collected in baskets after harvest and further dried. At the end of December, maceration occurs at low temperatures, followed by aging on the lees until March. The appassimento process gives this wine its signature depth and complexity.
This wine is characterized by an intense black color and harmonious aromas of red fruits and blackberries. It is a refined, well-balanced wine with soft and sweet tannins, with 30% of the wine aged in oak barrels. This aging adds extra layers of flavor and structure, giving the wine its fullness and complexity.
